I’m back with a new, gorgeous recipe for you which has been kindly gifted by Schwartz
This time of year I find myself constantly craving wholesome meals at the end of a work day and I’m so glad Schwartz are around to help make this process as simple as possible! Let’s face it; when it’s dark when you leave to go to work in the morning, and it’s dark when you leave work at the end of the day too, the last thing you want to do is cook a long and intricate recipe. That’s why I love these handy little packets. They ensure you are getting a good meal, without having to put the major graft in!
Schwartz kindly sent me this Beef Casserole mix and honestly, the flavour is so rich and tasty! The recipe includes one of your 5 a day, but I added mushrooms to mine to boost my veggie intake! I also found the portions to be really generous, so I popped some in the freezer for next week as well as having enough to take for my lunch the next day – always an added bonus!
The mix itself is suitable for vegetarians so you can substitute the meat with a vegetarian alternative if you want to reduce your meat intake or to cater to your dietary requirement. And as if this recipe couldn’t get any easier – it is also suitable for slow cooking, so you can add your ingredients to the slow cooker in the morning for it to be ready for your return.
I started by sautéing some onions (I have recently started using frozen onions because my eyes are SO sensitive and these don’t make them water at all!) and then I added the beef and carrots, frying these all off together until the carrots had softened and the beef had no traces of pink. I also threw in some mushrooms that I had leftover in the fridge. I added the sachet along with the required amount of water, popped the lid on and put it in the oven for 2 hours on a 180c heat. We ate ours with fresh greens and mashed potato and boy was it yummy!
